Ballerina Bites: Curry Bean Bites with Mango Tahini Sauce

Winter cooking can often leave many of us uninspired and ready to reach for the packaged food, so why not spice up your plate with something both indulgent and wholesome like these delicious Curry Bean Bites. These irresistible, flavour-packed balls pack just the right punch to satisfy any cravings, and their bite-sized packaging makes them a perfect dish to share with friends.

Curry Bean Bites with Mango Tahini Sauce
Whether it’s a movie night with friends or weekend game day, quite often the snack table is loaded with not the healthiest of options. So, for this month’s recipe I’ve created an appetiser that’s nutritious, tasty and ideal for any snack table.
Ingredients
1 medium red onion, diced
2 garlic cloves, crushed
2 large white potatoes, peeled & chopped into similar sized pieces
1 can black beans, drained & rinsed
1 ½ tbsp curry powder
1 tbsp olive oil
½ tbsp sesame seeds
1 handful coriander or parsley, roughly chopped
Salt & pepper to taste
Mango Tahini Sauce
½ cup frozen mango chunks (100g), defrosted
Juice of ½ large lemon
¼ cup tahini
4 tsp maple syrup
Salt & pepper to taste
Water to thin
Method
Pre-heat oven to 170°C Fan and line a tray with baking paper.
In a small frying pan add a dash of water or oil along with onion and garlic.
Sauté until softened.
Meanwhile in a saucepan add water and bring to the boil.
Once boiling, add potato and simmer until tender when pricked with a fork.
In a food processor add black beans, curry powder, olive oil, sesame seeds, coriander or parsley and salt & pepper to taste.
Once red onion, garlic and potatoes are cooked add to the food processor too.
Lightly pulse until it starts to come together.
Take 1 tbsp of the mix and roll into a ball.
Repeat the process until no mix remains.
(You may want to wet your hands to avoid sticking when rolling.)
Bake for 30mins or until golden.
Meanwhile make sauce by adding all Mango Tahini Sauce ingredients in a smoothie blender or Nutri Bullet.
Blend until smooth.
(Throughout this process you may need to add dashes of water until it’s a consistency you like.)
Serve Curry Beans Bites on a plate and bowl of the Mango Tahini Sauce.
Makes 25 Bites.
PS: This recipe can also be made into burgers, by shaping into 4 patties instead of balls and served in a bread roll along with fresh salad and the sauce.
